Do the kenji method. Add baking powder to change the alkalinity of the water, cook until almost over cooked, drain and toss with a bit of neutral oil to rough up the exteriors. Pre heat a sheet pan or your air fryer basket and roast them until crispy. Crazy good.

I usually don’t use oil at the rough them up stage. I think that would trap some of the moisture on the surface… which I remove further with refrigeration. But I’ll give this method a try.

My parents and every home cook in Italy made me hate potatoes for a long time. Italians just suck at potatoes.

I agree that many Italians prep them “in humido” which is lacklustre to say the least.. or they just add them as filler to soups.

No respect given to the potato. All their love went to wheat

Yeah, if you're going for max crispy, wire rack for 20 minutes to let them steam off and then do the oil toss.
