see for me the question is - why would i ever use AI to book flights? it's so easy to search and book without it. I can't imagine how AI could possibly make it easier and faster even if it worked, which apparently it doesn't.

There are already search aggregators who do exactly that though, and just do it through good old fashion API access to the airlines search. Throwing AI into the mix is just a solution in search of a problem.
Google flights, Kiwi, Kayak, etc already do this extremely well.
