Around the League 2019-2026 Edition

Do the kenji method. Add baking powder to change the alkalinity of the water, cook until almost over cooked, drain and toss with a bit of neutral oil to rough up the exteriors. Pre heat a sheet pan or your air fryer basket and roast them until crispy. Crazy good.

I usually don’t use oil at the rough them up stage. I think that would trap some of the moisture on the surface… which I remove further with refrigeration. But I’ll give this method a try.

My parents and every home cook in Italy made me hate potatoes for a long time. Italians just suck at potatoes.

I agree that many Italians prep them “in humido” which is lacklustre to say the least.. or they just add them as filler to soups.

No respect given to the potato. All their love went to wheat

Yeah, if you're going for max crispy, wire rack for 20 minutes to let them steam off and then do the oil toss.

And as far as deep fried potatoes go.. good deep fried potatoes are dying at the hands of cost and labour.
If a kitchen will cut their own fries.... dry them out properly and then double fry them, like you're suppose to do, then you can have a masterful french fried potato.. 35-40 years ago the first food trucks that popped up around here and hanging near the bars downtown were mostly french fry trucks... there was 1 dude that always had a 30+ minute wait starting at around 8pm... he had it down pat.. cut his own. dried them out and then fry them twice.. once for cooking and the 2nd time for crisping...
those of you maritimers here have probably been to Deluxe a few times... they would cut the potatoes right up front 15 feet from the counter. you knew you were eating freshly cut up potatoes.

Deluxe always made the best fries.

However, the last couple of times we've eaten there I found the fries were not as good. Haven't been back since.

I air fry Cavendish Flavour Crisp straight cut fries in our oven, as good or better than any fries I've had elsewhere.

Also, anyone who doesn't like potatoes in any shape or form simply cannot be trusted.

Last few times at deluxe was a major let down especially at the price.
There are far too many upper scale pubs in the area that do old school fish and chips I’d rather go to than deluxe when im craving that.
Driving along the south shore is NS, there are some crazy good places to get good fish and chips.. the are right on the fucking water and really have no excuse not to be cooking fish that wasn’t caught that day or at worst the day before.
Have only been to NL twice but one time went to a small place in St Johns that actually had the name of the fisherman and his boat that brought in the cod that morning they were serving your fish and chips from. That was pretty cool.
